A\u00f1adir las patatas y cocer hasta que est\u00e9n tiernas y crujientes, unos 15 minutos. Escurrir bien y cortar en trozos del tama\u00f1o de un bocado. Calentar el aceite en una sart\u00e9n grande. Sofre\u00edr la cebolla hasta que est\u00e9 dorada y blanda. A\u00f1adir las patatas y el pimiento a la sart\u00e9n y cocinar a fuego medio-alto, removiendo con frecuencia, hasta que se doren. Incorporar el ma\u00edz, el tomate, el or\u00e9gano, la sal y la pimienta negra molida.
