Rica en prote\u00ednas, se consume en Per\u00fa como cereal o en guisos. Tambi\u00e9n se utiliza como espesante de sopas.<\/p>\n<p><strong>Ingredientes<\/strong><br \/>\n1 taza de quinoa (Lavada en un bol con agua fr\u00eda y frotando el grano entre las palmas de ambas manos. Verter el grano en un colador fino y enjuagar con agua fr\u00eda).<br \/>\n3 tazas de agua<br \/>\n2 1\/2 cucharaditas de sal<br \/>\n1 taza de cilantro picado<br \/>\n3 tomates medianos, firmes y maduros, cortados en trozos de 1\/2 pulgada aproximadamente<br \/>\n4 cebolletas recortadas y finamente picadas<br \/>\nZumo de un lim\u00f3n<br \/>\n1\/3 taza de aceite de oliva<br \/>\n1 cucharadita de comino en polvo<\/p>\n<p><strong>Preparaci\u00f3n<\/strong><br \/>\nPonga el agua, la quinoa y 2 cucharaditas de sal en una cacerola de 3 cuartos. Tapar la olla hasta que el agua empiece a hervir. Bajar el fuego a medio y tapar la sart\u00e9n entreabierta. Cocer la quinoa durante unos 15 minutos o hasta que el grano est\u00e9 hecho pero no blando. Escurrir bien la quinoa en un colador fino. Pasar la quinoa a un bol de cristal mediano y dejar enfriar, preferiblemente refrigerar toda la noche.<br \/>\nEsponjar la quinoa con un tenedor. A\u00f1ada el cilantro, los tomates y las cebolletas. En un bol peque\u00f1o, prepare un ali\u00f1o con el zumo de lim\u00f3n, el aceite de oliva, el comino y la sal restante. Verter el ali\u00f1o sobre la ensalada y mezclar bien.
